If you’re looking to eat a healthy, wholesome meal that’s high in protein, here are three recipes you will find handy. Yes, there’s more to a protein rich dinner than grilled chicken.

Baked Caprese Chicken

2 pieces chicken breasts, boneless and skinless
½ cup sundried tomato
4 slices of mozzarella cheese
4-6 leaves of spinach
4tsp olive oil
1 tbsp mustard
1 tbsp lemon juice
½ tsp sugar
½ tsp Italian mixed herbs / any other herb of your choice
½ tsp red pepper flakes
Salt & pepper to taste

1. Pre-heat oven to 180C/350F.
2. Mix together the mustard, lemon juice, sugar, Italian mixed herbs, red pepper flakes in 2tbsp olive oil. This is the Italian dressing for the base.
3. Cut a pocket into each chicken breast.
4. Coat the chicken with the Italian dressing.
5. Stuff the chicken breast with sundried tomato, some spinach and cheese.
6. Heat oil, and add chicken to cook for 2min on each side.
7. Transfer to oven and cook for 15 minutes (or until the chicken breast is golden brown).

Grilled Tofu With Vegetables and Crispy Chickpeas

1 cup extra-firm tofu, cut into ½ inch cubes
2 tbsp olive oil
2 tbsp nutritional yeast flakes
½ tsp curry powder
1 ½ cup chickpeas, rinsed and drained
Salt & pepper to taste
1 large onion
20 cherry tomatoes, halved
1 bunch asparagus

1. Pre-heat oven to 180C/350F and line a sheet pan with parchment paper.
2. In a bowl, whisk together oil, yeast, curry powder, salt, and pepper. Add tofu and chickpeas and toss to coat. Make sure the tofu is drained of all the moisture.
3. Spread tofu and chickpeas evenly on sheet pan. Roast for 20-30min.
4. Add tomatoes and asparagus, season with salt and pepper, and roast for another 15 minutes until the chickpeas are crispy and tomatoes are soft.

Warm Spiced Chickpea and Broccoli Wrap

Ingredients

1sp olive oil
1 cup broccoli
¾ cup chickpeas, rinsed and drained
Salt & pepper to taste
2 tbsp nutritional yeast flakes
2 tbsp crumbled goat cheese
1 tbsp chicken/vegetable stock
¼ tsp cumin
1 tbsp fresh parsley, chopped
1 whole wheat tortilla *

*You can opt for a wrap made of ragi/bajra

1. Heat oil over medium heat. Add broccoli, season with salt and pepper, and cook for 5 minutes.
2. Add chickpeas, yeast, goat cheese, stock, and cumin. Season with salt and pepper, and microwave for 2 minutes. Add parsley, and mash this mix lightly with a fork.
3. Add this chickpea mixture to the wrap, and then add the cooked broccoli. Wrap tightly.
